Roasted Cauliflower

I love cauliflower. Like seriously love it. And it's not a recent thing — I was the kid who always loved to eat vegetables. Except for my mom's broccoli. *shudder* Anyway, I've been trying to figure out a way to get Julie to eat more cauliflower — she did not like it saúteed with garlic and olive oil; it was too crunchy.

I know she likes sweeter things rather than more savory and I realized that the cauliflower at Green Symphony down the street from work was right up her alley. It's softer and sweeter and has a nice golden hue.

Apple cider roasted cauliflower

  • 1 head cauliflower, washed and broken into florets
  • 1 cup apple cider
  • 4 or 5 cloves of garlic, crushed

  1. Turn on broiler
  2. Put all ingredients in a broiler-safe dish (like a straight walled saútee pan) and broil, stirring occasionally until done.

We actually ate this as part of a build-your-own pizza night along with a quick tomato sauce, chicken sausage (store-bought), thawed, drained frozen spinach, feta, fresh mozzarella, and onions available as toppings. I really love that quick tomato sauce -- it can be made in about 20 minutes and is full of flavor for a little bit of work.

Quick tomato sauce

  • 1 can San Marzano tomatoes (chopped or whole). And yes, I buy these specifically. The tomatoes are really what make this dish — skimp on them and this will taste like you skimped
  • 2 cloves garlic, thinly sliced
  • 1 white onion, medium dice
  • 3-4 tbls of fresh oregano
  • olive oil
  • salt
  • pepper
  • crushed red pepper

  1. In a medium sauce pan heat up 1-2 tlbs of olive oil until shimmering, add the onions a pinch or two of salt and drop the heat to medium-low to sweat.
  2. When the onions are soft and translucent, add the garlic and cook for another few minutes.
  3. Add the can of tomatoes and bring the heat to high until it boils
  4. Bring down to a simmer for 10-15 minutes, add pepper and crushed red peppers to taste
  5. Add the oregano and let cook another 5 minutes

I usually hit the sauce with the immersion blender and let it go another 5 minutes after.
